Launching Spring 2026, a project that is close to Carl’s knife roll.
Young Knifes Cookery Club, aimed at 15-18 year old’s the club will be a 8 week journey through the workings of the catering industry, working all the way to creating their own pop up!
Starting Spring 2026.
Young knifes is an idea that has been brewing in my mind for a while. Essentially a way to encourage young people to try out the catering industry without losing all the weekends away….just yet! Gaining some hands on experience with professionals & working with some like minded people.
The premise is simple:
For 8 weeks we meet, eat, cook & plan what their pop ups look like together. Held at our site, Lar.Da with 10 fellow students. Carl, Elaine & other industry professionals, will be showcasing what the catering industry has to offer, teaching skills that can be transferred in to every day life and the working world.
What will they/you get from it?
We aim to deliver a space where all students can be creative, learn about an industry that we all use. To pick up some skills & behaviours that can be transferred to work & life. Wether catering is something they just want part time work in; a trade that will be a part of their lives as a career, or there is just a fun interest in the course.
Learning to cook a nice meal with a smile & the ability host is invaluable.
What we do not expect:
We are not looking for slaves, not even child labour. We will do the majority of the heavy lifting & the sharp dangerous work. Each one of us has a different skill level, we are here to match them, guide them and ultimately…have fun!
So what does the course look like? See below!
Week 1 - Would you like a cup of tea?
Introductions, course layout, teams formed & a focus on meet & greet
Week 2 - The paper work has to be done!
Compliance, food hygiene, brain storm on ideas & a focus on safe delivery of food
Week 3 - Service Please!
Our second industry specialist joins us to talk about the art of service, the customer experience & what it means to deliver more than the expected.
Week 4 - Plot, Plan, Pilot
Pads out, cooking books open! We plan our pop up in detail, split the rolls up & get ready for our first cook off!
Week 5 - Round 1
The first of 2 cook offs, 1 team in the driving seat, the other in support.
Week 6 - Round 2
Roll reversal! The teams switch it up!
Week 7 & 8
We hold pop ups at Lar.Da, where all are invited to come & celebrate the classes results.
Course Details
8 x Wednesdays starting 8th April 2026. It’s important to be able to attend each class to get the most out of the course.
Start time, 6pm
Finish time 9pm
Cost £175 (payable in full before course starts)
Limited to 10 spaces
Optional food Hygiene certificate level 1 and 2, £15 each

Important information for parents
Safe Guarding: We take our roles incredible seriously we are DBS checked & parents ourselves. We can’t do this if we don’t have your support. Each class we would need a parent to join us, eat & be a part of the evening. In turn, for your volunteering, you would be supplied with food & a drink token on the night of the pop up.
Ingredients: We pride ourselves on being a free from UPF (Ultra Processed Food) as possible, promoting healthy & fresh food. Drawing on techniques to bring out the flavour rather than adding unnecessary elements. To maximise this, we will be keeping all classes vegetarian as a way of discipline & inclusion.
Behaviour & Respect: We expect all students to act in a respectable manner throughout the course entirety. If this is not the case they will be removed from the course without refund.

Funding, as of now we don’t have any but we are open to sponsorships and funding to get as many people who would like to join YKCC. If we get any news we will let you know!
